Rice Porridge (Risgrynsgrøt) Ingredients: 12/3 cups (3 � dl) water 1 � tbsp. butter 1 cup (2 � dl) rice, long grain Salt and sugar to taste 1 qt. (liter) milk, boiling Cinnamon In a heavy-bottom pan sprinkle rice into boiling water and stir until it returns to a boil. Reduce heat and cover; cook slowly until most of the water has been absorbed. Add boiling milk, stir, and continue to simmer until rice is tender and porridge has
cardamom � tsp. lemon peel, grated Lard or shortening Beat the egg yolks and sugar until light and fluffy. Whip the cream until firm and add to the eggs together with the lemon peel and cognac. Add cardamon to the flour and sift into the mixture, keeping out a little flour to sprinkle over the dough and some to roll dough out with. Cover and chill until the next day.
